Sausage & Butter Bean Stew
Sausage and Butter Bean Stew is a wonderfully comforting dish that the whole family will enjoy. When life is busy it’s essential to have quick and easy meals that you can prepare and leave to cook while you get busy with other tasks. This stew is exactly that, it takes care of itself all in the one pot until your ready to serve it up.
When I shared this dish on my Instagram Stories, it got such a great response that I knew that I had to post it here on the blog as a recipe post. At the time we were at the end of our food shop for that week and I was trying to use the last of the ingredients and create something that everyone would eat.
There were lots of clean plates at dinner time and my whole family enjoyed it, even my kids! Sausages are such a versatile ingredient and lend themselves to pretty much anything. I love using them in a pasta sauce instead of traditional minced meat, but I think they work so well in stews and casseroles too. The meat s already flavoured with a mix of herbs and spices, which means that you don’t have to add an excessive amount of ingredients to the sauce for it to have an impact.
One-pot dishes are probably one of my favourite ways to cook. Not only does it mean less washing up, but they make cooking so simple. You literally just pop everything in the one cooking pot and let it simmer away until it’s ready. With busy modern-day life, this makes them the ideal option for dinner.
I couldn’t believe how easy this sausage stew was to put together. After browning the sausages, I popped in the rest of the ingredients and let it all simmer and cook down so the sauce became richer and thicker. Since I was cooking this in advance for dinner I had a lovely lunch with my baby girl while it was simmering on the hob.

This stew is exactly that, it takes care of itself all in the one pot until your ready to serve it up.
- 6 sausages
- 1 courgette sliced
- 1 red pepper cut into chunks
- 6 chestnut mushrooms sliced
- 400g tinned butter beans
- 2 tbsp tomato puree
- 500g passata
- 2 garlic cloves minced
- 2 tbsp Worcestershire Sauce
- 2 tsp mixed herbs
- 2 tbsp cooking oil of your choice

Heat the oil in a casserole dish on the hob and put in the sausages so that they brown all over.

Next, pop in the garlic and vegetables and cook for 5 minutes so they become slightly tender. Stir often so that the garlic doesn't burn on the bottom of the pan.

Stir through the tomato puree before adding the passata, mixed herbs and Worcestershire sauce.

Pop the lid on top and turn down the heat. Let the stew simmer for around 20 minutes.

Take off the lid and stir in the butter beans and cook for a few minutes making sure the sausages are cooked through.

Serve with your favourite side dishes and enjoy!
