Baked oatmeal, bursting with juicy berries, nutty almonds and spiced with aromatic chai makes this easy make-ahead recipe a breakfast time winner!
Chai is my obsession in the autumn and winter months, but it doesn’t mean that you can’t enjoy it all year round too. When teamed up with summer berries, it gives it a whole new twist, juices from the berries really brings it alive.
Making time in your morning routine to kick-start your day with a nutritious breakfast is the perfect action of kindness towards yourself and your body will be forever grateful. Eating mindfully and taking your time over breakfast will help to give your metabolism a boost, focus your mind and help to stabilise your blood sugar. Looking after your emotional and physical health through actions of self-care, like making time for breakfast is something that I’m incredibly passionate about and is highlighted so well by the #WomanKind campaign.
- 2 cups rolled oats
- 2 cups almond milk
- 2 eggs
- 2 tbsp chai spice
- 2-3 tbsp maple syrup (depending on your sweet tooth)
- ½ cup toasted flaked almonds
- 1 cup raspberries
- 1 cup blueberries

Preheat the oven to 190 degrees and spray a large pie dish or 2 deep individual pie dishes with coconut oil cooking spray.

Mix all of the ingredients (except the berries and flaked almonds) together in a large bowl until well combined.

Add in the flaked almonds and berries and gently stir into the batter.

Pour the mixture into the pie dish(es) and bake for 30-40 minutes in the oven or until golden brown and cooked through.
Based on serving 6,

This recipe is designed to be made ahead, so you don’t even have to contemplate making breakfast when you’re in a rush. You can portion it up, and keep it in an air-tight container in the fridge for an easy breakfast option. It also stores well in the freezer too.
It’s the ultimate make-ahead breakfast and should help keep you going until your mid-morning snack time because of the inclusion of protein from the milk and eggs. Given the cake like consistency of the baked oats, you could easily make this a healthy option for your afternoon tea break or after dinner snack too!

This sounds like a breakfast worth trying - I’m not a tea drinker but would like chai spices. I have lost nearly 50lb attending Weight Watchers in the past 8 months - which is quite a challenge for a baking blogger - so I am very familiar with the plan. I think I’d ditch the maple syrup as it’s so high in Smart Points. The new Smart Points system rocks!
