Sausage and Butter Bean Stew is a wonderfully comforting dish that the whole family will enjoy.  When life is busy it’s essential to have quick and easy meals that you can prepare and leave to cook while you get busy with other tasks. This stew is exactly that, it takes care of itself all in the one pot until your ready to serve it up.

Ingredients
  • 6 sausages
  • 1 courgette sliced
  • 1 red pepper cut into chunks
  • 6 chestnut mushrooms sliced
  • 400g tinned butter beans
  • 2 tbsp tomato puree
  • 500g passata
  • 2 garlic cloves minced
  • 2 tbsp Worcestershire Sauce
  • 2 tsp mixed herbs
  • 2 tbsp cooking oil of your choice
Instructions
  1. Heat the oil in a casserole dish on the hob and put in the sausages so that they brown all over.

  2. Next, pop in the garlic and vegetables and cook for 5 minutes so they become slightly tender. Stir often so that the garlic doesn't burn on the bottom of the pan.

  3. Stir through the tomato puree before adding the passata, mixed herbs and Worcestershire sauce.

  4. Pop the lid on top and turn down the heat. Let the stew simmer for around 20 minutes.

  5. Take off the lid and stir in the butter beans and cook for a few minutes making sure the sausages are cooked through.

  6. Serve with your favourite side dishes and enjoy!
