Anyone else excited that pumpkin season has arrived?  I’ve been on a mass pinning spree looking for ideas on how to carve our pumpkins this year. We have yet to go to pick them, but I’m hoping to pop to the local farm shop to bring some home. It’s become a tradition for us, but only since having Aiden. It’s funny how children can change things like that, isn’t it?

While you’re carving your pumpkins you’re going to need to keep your energy levels up. It’s such hard work!  If you’ve got some pumpkin puree in the cupboards or you’re looking for recipes for Halloween to use up your pumpkin innards, these pumpkin chocolate fro-yo sandwiches are the perfect spooky treat.

Ingredients
  • 3 eggs
  • 125 g melted butter
  • 480 ml almond milk or milk of your choice
  • 240 g self-raising flour
  • 75 g milk or dark chocolate chips
  • 2 tsp cinnamon
  • 2 tbsp pumpkin puree
Instructions
  1. Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).

  2. Beat together the eggs, milk, melted butter, pumpkin puree, chocolate chips, and cinnamon until well combined and then pour into the flour in a large bowl. Mix together until completely smooth and free from lumps.

  3. When the waffle machine is ready, pour the batter into the waffle maker and cook.

  4. Let the waffles cool down before spreading the yoomoo Vanilla frozen yogurt on top and making a sandwich with a second waffle.

Not going to lie, these are messy! But where there is mess there is fun and these fro-yo sandwiches are definitely that.  They would be perfect at any pumpkin carving or Halloween parties that you have planned or as mentioned above great for using up all that pumpkin flesh too.  The waffles freeze really well, so with a batch ready made and some Vanilla yoomoo in the freezer dessert is easily made in seconds.
