Is anyone else dreaming of sun, sea, and sand at the moment? It feels like the weather is mocking me because even though it’s spring in my head the weather just doesn’t want to play ball. Regardless what the weather is doing, I’m trying to break away from the grey wet weather and find comfort and sunshine in my food.  One of my favourite things to do when the weather is gorgeous is to sit outside with a drink, some nibbles and good book or magazine secretly pretending that I’m in the Italian Riviera, a place that I’m dying to visit soon.

On these occasions, like with all my meals, I don’t want to be slaving in the kitchen of hours creating my tasty snack. Fragata has just released their Black Olives With Sea Salt in Waitrose, which come as ready to eat pouches that can be eaten on the go.  They’re just the right size for one, however, I’ve been mixing them with other simple ingredients so they take on a totally different flavour. Olives mixed with delicious herbs and lemon is an easy way to jazz them up and reinvent them.  I was approaching this recipe with a rustic Italian style so opted to add rosemary, thyme, fennel seeds, lemon and extra virgin olive oil, so simple but effective, just like all Italian food.

Ingredients
  • 1 Fragata Pitted Olives With Sea Salt
  • 75 g Fragata Manzanilla Olives Filled With Piquillo Pepper (brine drained)
  • 1 tsp dried fennel seeds
  • 1 tsp fresh thyme (chopped)
  • 1 tsp fresh rosemary (chopped)
  • Lemon rind from 1/4 of a lemon
  • 75 ml Fragata Extra Virgin Olive Oil
Instructions
  1. In a bowl, stir together the ingredients until evenly distributed.

  2. Pour over the extra virgin olive oil and mix together making sure everything is well coated with the oil.

  3. Serve immediately and enjoy!
