Love enjoying fresh fruit to start your day? Me too, and today I’m serving up a delicious leisurely brunch recipe to try this weekend. Making waffles has become one of our favourite weekend traditions. It’s so nice to sit down with a big stack of these oat waffles topped with an apricot sauce made with softened strawberries and basil, and maple syrup for added sweetness and catch up with family and friends.
Apricots are in season now and I tend to eat them just as they are for a snack, however, I’ve looked at more creative ways to use them in my cooking. With us being right in the middle of the strawberry season too, they were the perfect match. Also, I really love adding herbs to fruit to give them a different flavour with very little effort. Basil has a sweet but peppery flavour which compliments the softened fruits, and for your information, your kitchen is going to smell amazing while the sauce is bubbling on the hob.
If a big stack of waffles wasn’t special enough for brunch, how about topping them with some delicious frozen yoghurt to take them to the next level? The honey ‘n’ granola frozen yoghurt by yoomoo is the perfect brunch treat and makes these oat waffles taste like dessert, (yoomoo is only 118 caloires per portion) and everyone loves to feel like they’re eating dessert for breakfast! If you haven’t tried yoomoo Honey ‘n’ Granola yet it’s refreshing fro yo filled with swirls of honey and crunchy granola pieces and is a great snack for any time of the day.

Love enjoying fresh fruit to start your day? Catch up with friends with these oat waffles topped with a sauce made with softened apricots, strawberries and basil and maple syrup for added sweetness.
- 250 g rolled oats
- 250 ml oat milk (or milk of your choice)
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 12 strawberries
- 6 apricots
- 2 tbsp chopped basil
- 1-3 tbsp maple syrup
-
Set up your waffle maker as per the manufacturer's instructions (I used the classic waffle setting).
-
Beat the oats, milk, eggs, vanilla extract, and baking powder together until smooth.
-
When ready, pour the batter into the waffle maker and cook.
-
In a heavy bottomed saucepan on a medium heat, warm the strawberries, apricots, basil and maple syrup until the fruit has softened. Approximately 5-8 minutes.
-
To serve, top the oat waffles with the fruity basil sauce and a scoop of yoomoo's honey 'n' granola frozen yoghurt.
Yoomoo has launched a fabulous campaign that is focused on inspiring women to be the best version of themselves in all aspects of life. There are many ways to achieve this and one of which is making beautiful food that not only fuels the body but also feeds the soul. Of course, brunch is a relaxing time and connecting with family and friends over good food can make you feel good too.
If you don’t have a waffle iron at home, then the batter is thick enough to make pancakes instead and they taste just as good. Rather than a traditional waffle batter, in this recipe, I used oats, which give the waffles a light fluffy wholesome texture. A great option for a summer brunch served with a fruity mocktail and lots of cheer.

This looks lush Jemma and I love apricots too. I’m also liking the look of that frozen yoghurt. Yum!
Thanks Jac. It’s certainly scrummy. ?
I’ve never made my own waffles, but the recipe doesn’t sound too hard to follow. My mum does have a waffle maker, but it makes the round ones that are pressed into heart shapes – would this work? x
Oh how lovely! Yes it would totally work. Love the idea of heart shaped waffles.
Oh my, what a heavenly brunch. Love the idea of making waffles with oats and all your toppings sound divine, especially that honey & granola yoomoo.
Thank you, Choclette. The fro yo certainly takes the waffles up a notch.
I love waffles. We often have bacon or sausage sandwiches at brunch time here.
Oooh, they sound yummy.
Yes please! I would absolutely love to tuck into one, I most definitely have a craving for waffles now.
Ha! They are really delicious.
This looks and sounds so good! I don’t have a waffle maker (I really need to change that) but will definitely try the recipe as pancakes.
They will definitely work as pancakes. ?
I love waffles and these would be great for a summer breakfast xxx
Thanks Jo!
I like the sound of everything just minus the basil. It looks so scrummy and that frozen yogurt! I need some of that in my life
Thank you! ?
These look perfect for a sweet brunch! I want to try making these!
I hope you like them. ?
This looks absolutely delicious. I’m loving the frozen yoghurt as well. Not sure I could make my own waffles but I’m sure I could give it a go x
The fro yo is so yummy!
These look utterly delicious. I’ll definitely be trying them out next time we have friends to stay.
Oh thank you! I hope they like them.
I’m SO rubbish with flavour combinations. I would never have thought to put basil with apricot. I love warm fruit, I bet it goes amazing with the frozen yoghurt!
I never know what to have with waffles, but this is a great recipe idea for a weekend brunch. Thank you!
